May Clee-CadmanHello, my name is May Clee-Cadman. I am a cake designer and I manage my own wedding cake company based in London. In my blog you will find recipes, baking tips and creative ideas, as well as many gift ideas and personal recommendations. If you’d like to know a little more about me then please read on….

I grew up in an old rambling house in the Cotswold’s and since childhood I have loved baking and cake decorating. On a summer’s day you would find me in the garden making mud pies topped with primroses and trying to find my own formula for crystallizing rose petals. When I was old enough I moved from the garden to the kitchen, baking Victoria sponges in our old Rayburn. I became official baker for all family events and most days after school I would whisk up a new recipe.

I headed off to university where I studied ‘Art and Design History’ and along the way I flirted with the music industry. I sang backing vocals for Robert Plant of Led Zeppelin and generally I had a lot of fun, eventually marrying a musician! But the music world wasn’t as flowery and pink as I’d have liked it to be and I was continually drawn back to the cake kitchen. I decided to start my own cake company and I earned extra money by working for the Queen at Buckingham Palace. In 2003 I established Maisie Fantaisie.

I’ve come a long way since my childhood days in the garden and almost like a fairy tale my mud pies have been transformed into beautiful wedding cakes. Maisie Fantaisie has appeared in ‘You and Your Wedding’, ‘Brides’ magazine, ‘Wedding’ magazine, ‘Cosmo Bride’ and ‘The Sunday Times’ and also on the BBC, Channel four and ITV. I have had two books published and I supply some of the most prestigious venues in London and the UK.

    Hi Maisie,
    I’m a fan of your cakes - pardon me, your “art work” - and you have inspired me (more than ever) to keep on my baking and decorating classes.
    I’m from the States and would like to ask you for permission to use you “blue peonie” wedding cake as my final project exhibition in graduation class:) …
    My favorite cakes are: blue peonie (of course), romantic rose wedding cake, Tallulah wedding cake… well I like them all - hahaha..
    Can you please tell me wat brand peonie cutter you used and how many layers per row?…
    I’m truly anxious to start my project :)

    I want to thank you very much for the spectacular and utterly delicious ‘Lily and Daisy’ cake you made for our wedding. It travelled a long way from London to Sark, and the delicate sugar flowers reached their destination safely thanks to their careful packaging. There was even some cake left for the afternoon tea the following day, to everyone’s delight, children and adults alike! So thank you so much again!
