You can also use florists wire to insert them into the cake if you prefer" should read "Cut off the heads of the flowers for the top of the cake and cover the stems with florists tape. NB: There are several varieties of fresh flowers used as cake decoration in this book. Please be aware that the Gloriosa Lily used to decorate the Rouge cake on page 112 is toxic if eaten. The use of Gloriosa in my book is a creative choice and not a recommendation. Please ensure that all display flora and any cake wires used for decoration purposes are removed from your cakes before serving.
